Gin Sour:
1.5 ounces gin
1.25-1.5 ounce Aperol
1 ounce lemon juice
1 oz aquafaba* OR egg white
Shake over ice for at least 30 seconds. If not foamy enough, strain into another shaker or a jar with tight-fitting lid and shake another full minute without ice. Strain into glass, if ice remains. Garnish with the following:
Lemon wheel (garnish)
3 drops aromatic bitters (garnish)–swirl drops of bitters lightly with a knife blade
*Aquafaba is the liquid from a can of chick peas: no scent, no flavor, but more foam and longer lasting than an egg white. Try it! Then keep extra in 1-oz cubes handy in your freezer.
